That’s why the development group’s professional chefs were also tasked with describing, analysing and specifying what the best frying properties were. Contact and release between surface and food and the perfect degree of crispiness featured high on the list.
The chefs really put the frying properties to the test, and kept reporting back with evaluations and suggestions for improvement. And the reviews of the new Stratanium+ coating are clear: The company has succeeded in combining improved releasability with frying properties that meet the chefs’ highest requirements.
During use, the rough surface forms a series of micro-holes, which improve the frying properties, and literally turn the surface into that of the classic griddle pan. When you fry on a Stratanium+, the sound is also different, ‘crispy’ and ‘crackling’ compared to a traditional nonstick coating.
