With a fundamentally new technology, we have succeeded in creating a surface that surpasses all previous ones when it comes to hardness, and therefore strength and durability, while still retaining a perfect food-release and being exceptionally easy to clean.

Great ambitions

The ambition for SCANPAN's development team stretched beyond the objective and measurable improvements in strength and releasability. The new surface also had to ensure even better frying properties.

That’s why the development group’s professional chefs were also tasked with describing, analysing and specifying what the best frying properties were. Contact and release between surface and food and the perfect degree of crispiness featured high on the list.

Approved by chefs

The chefs really put the frying properties to the test, and kept reporting back with evaluations and suggestions for improvement. And the reviews of the new Stratanium+ coating are clear: The company has succeeded in combining improved releasability with frying properties that meet the chefs’ highest requirements.

During use, the rough surface forms a series of micro-holes, which improve the frying properties, and literally turn the surface into that of the classic griddle pan. When you fry on a Stratanium+, the sound is also different, ‘crispy’ and ‘crackling’ compared to a traditional nonstick coating.

Most important of all is the chefs’ excitement over the degree of crispiness and special browning that forms when frying on a Stratanium+. A unique feature that accentuates different tastes and flavours, which are usually hard to bring out in a traditional nonstick pan.

The Stratanium+ coating is something out of the ordinary and is therefore selected for only a few series: TechnIQ in aluminium and HaptIQ in mirror polished steel.
