Guide to your copper products

Scanpan copper products in brief:

Using your copper products

Our copper products have a layer of copper on the outside for aesthetic reasons – the inside is stainless steel and should therefore be used and cleaned in the same way as our steel products. Read how to use your copper products. See video guides below.

The water bead test

Has your pan reached the right temperature for frying?

Copper pans (steel pans) are perfect for frying food where a crispy and delicious crust is desired. However, the pan must have the right temperature in order to achieve the desired crust and crispiness and to prevent the food from sticking to the pan. You can test this with a few drops of water:

Heat the pan: Place the pan over medium heat and let it heat up for about 5 minutes.

Add a few drops of water: Drizzle a small amount of water (a few beads) on the surface of the pan.

Observe how the water behaves:

  • Too cold: If the water just spreads out and evaporates quickly without pooling, the pan is not hot enough.
  • Perfect temperature: If the water drop immediately collects into a bead that dances around the pan, the pan has reached the optimum frying temperature.
  • Too hot: If the water evaporates almost instantly with a hissing sound, the pan is too hot. Let it cool down a bit before you start cooking.

You are now ready to cook

The pan now has the right temperature and you are ready to cook – turn down the stove slightly.

  • Add fat to the pan. Preferably use oil with a high smoke point, such as rapeseed oil or vegetable oil, as the steel pan can reach a very high temperature
  • Add the food and leave it in until it has formed a crust. It is important to be patient – if you try to turn the food before the crust has formed, it will stick to the pan. A piece of fish, for example, might be ruined
  • Turn the food over and repeat the process

When you boil pasta, you should wait to add until the water boils – otherwise the salt can corrode and leave marks on the product.

Steel can also be used to store the food after cooking, unlike cookware with coating.

Cleaning and maintenance

Cleaning and maintenance

Before the first use, remove all stickers, wash the product in warm, soapy water and wipe it dry. 

It is easiest to clean the product while it is still warm. Allow the product to cool down for about 5 minutes before cleaning it. 

  • Always use dishwashing liquid – always wash your products in warm water with dishwashing liquid. The product must be completely clean.
  • Do not put cold water on hot pan – never pour cold water on a hot pan or pot as it may warp the bottom.
  • In case of heavy charring inside the product after burnt-on food:
    • Fill ¾ of the product with water and bring it to a boil over medium heat.
    • Add dishwashing liquid and simmer for 15 minutes.
    • Clean the product as normal.
    • Repeat the process if necessary. 

Dishwasher:
You can clean your copper products in the dishwasher. However, it is not recommended as it shortens the life of the product.

Remove burn marks due to overheating

Burn marks on a steel surface can occur when the pan is exposed to high heat. Burn marks are often bluish-brown and appear on the surface of stainless steel. These marks are usually cosmetic and do not affect the performance of the pan, but they can be removed if you want a cleaner and more polished surface.

  • Fill the pan/pot with equal parts white vinegar and water.
  • Bring the mixture to a boil and simmer for 5-10 minutes.
  • Pour out the liquid and sprinkle baking soda on the marked areas.
  • Scrub gently with a sponge or brush until the marks come off.
  • Rinse thoroughly and wipe the pan dry.

Cleaning

Refresh your copper product

Could your copper pots and pans do with a refresh? With this tip, you can keep your copper cookware sparkling clean without using harsh polishes.

  • Dissolve half a sachet of citric acid in 2 litres of warm water in a washing-up bowl
  • Put the copper cookware into the mixture. Leave for 15 minutes
  • Use a soft sponge or maybe a small, soft toothbrush to remove any black dirt that has not come off
  • Rinse the copper cookware in water with washing-up liquid and wipe them dry.
