Use a rack in your roaster and let the hot air in the oven circulate all the way around the roast or chicken, which will then be nice and crispy on all sides.
Did you ever cook with a steamer insert? You keep you food packed with flavour and vitamins when you steam it. And when you are boiling pasta, rice or potatoes anyway, why not steam your broccoli over the same dutch oven - it will be beautifully green and have a yummy al-dente bite. And the bonus: you only use power to heat up one dutch oven, and you only have one dutch oven to clean.
